Welsh Cakes Recipe
The perfect treat for St Davids Day (or any day!). These cakes are a mash up of drop scones and pancake. The secret with all recipes is to use the best possible ingredients you can. If you want traditional flavours, then opt for Welsh Butter and Welsh Salt.
Ingredients
- 250g Self Raising Flour
- 125g Cold Cubed Butter
- 75g Sugar
- 75g Currants
- 1/2 tsp Mixed Spice
- Half a Pinch Salt
- 2 Tbsp Milk
- 1 Large Egg (beaten with the milk)
- 1 tsp Baking Powder
Method
1) Mix the flour and salt together in a large bowl and rub in the butter until it becomes like fine breadcrumbs
2) Add the sugar and currants and stir well
3) Mix the egg and milk then pour the egg mixture in and mix until you have a stiff dough
4) Roll the dough out on a lightly floured board until 5mm (1/4 inch) thickness and stamp out rounds with a pastry/biscuit cutter
5) Heat the griddle or cast iron pan over a medium heat until hot and grease with a little butter.
6) Cook the cakes for about 3 to 4 minutes each side, until they are golden brown and have risen slightly
7) Serve immediately sprinkled with a little extra caster sugar
