Simple 1 Cup Pancake Recipe

Pancake Day (Shrove Tuesday) is the feast night before Lent – but they are a great snack any time. Simple, delicious, and if you fancy being fancy – try your hand at some pancake art. 

Pancakes are a skill for life, and the great thing is, the ingredients are simple, cheap and make the basis of all the important things in life like Yorkshire puddings, Toad in the Hole and Waffles 🙂 This recipe is used with our 330ml mugs (standard mug size)

Everyone likes a different pancake topping…We love traditional lemon and sugar or delicious Golden Syrup – but you can switch to Frenchie Nutella, Crepes Suzette or simple Icing Sugar and Fruit. Prefer Savoury? No problem, it’s a simple switch of toppings and if you really like savoury – just add a larger pinch of salt and a grind of black pepper!

Ingredients

  • 1 heaped mug Self Raising Flour
  • 1 Mug Milk
  • Egg
  • pinch of salt

Method

1) Whisk all of the ingredients together in a big bowl – and that’s it!!

If you want waffles, drop scones, or American style pancakes, keep the mix thick. If you want traditional English pancakes, add a little more milk until it is the consistency of cream

2) Add butter to a pan while it is sizzling (but not so hot it smokes), then put in your batter – swirl it around – and when it gets brownish on one side 30 seconds ish – FLIP IT without sticking it to the ceiling

Serve immediately sprinkled with a little extra caster sugar

You can complicate everything with food colouring and actual artistic skill and talent – but if you just want a bit of fun for the kids – you can make simple shapes really easily – all you need is a squeezy bottle with a nozzle
